An Economical Method of Producing Acidophilus Milk

ABSTRACT

A new method of making acidophilus milk is described. This consists in incubating the skimmilk at 37° to 40°C. for

to 3 hours, heating to as near the boiling point as possible for 30 minutes, quick cooling at 37° to 40°C, immediate inoculation with an actively growing culture of Lactobacillus acidophilus and holding at that temperature till coagulation takes place or a few hours thereafter. The method is more efficient and gives a better product than the one now in use and has the merit of cutting into half the time required to get the skimmilk ready for inoculation.
