The Churn as a Source of Molds in Butter*

ABSTRACT
- Two churns from commercial creameries were studied to determine the presence of mold.
- Molds of several types were found in various places in both churns, especially in Churn A, which had been known to be giving trouble.
- The genera of molds present in the churns are listed.
- It is shown that the churn may be an important source of mold in butter.
