A Survey of Present Methods of Grading Milk at Condenseries, Evaporated and Dry Milk Plants

ABSTRACT

The need of definite information regarding the methods in use at the present time in this branch of the dairy industry is evident to the sub-committee on Bacteriological Methods for Condensed, Evaporated and Dried Milk of the American Dairy Science Association. By making use of mailing lists furnished by the American Dry Milk Institute and Evaporated Milk Associations addresses of the companies manufacturing the products were obtained. Through the suggestion of Dr. R. S. Breed, Chairman of the General Committee, an effort was first made to get in touch with the person in each organization that was directly in charge of the control work for each particular company. Thirty-one companies expressed their willingness to coöperate and were sent a questionnaire asking for information on the subject. From the 31 companies 20 questionnaires have been received up to the present time. Thirteen companies were manufacturing condensed, the same number evaporated, 12 spray powder, 4 roller but failed to specify the kind manufactured.
